Whew! (wipes forehead) Just made it in under the wire this week!

One of the most fun aspects of cooking is the ability to take any existing recipe and adapt it to your own personal likes and dislikes. Take this good old standard recipe of stuffed peppers; traditionally, they are made with ground beef, white rice and tomato sauce. Um. Ew. No really, for those of you out there that dig that pairing, then more power to ya, but for me honestly, I have got to say that combo makes me yawn, and I think it tastes a bit bitter and uninspired. A couple of years ago, while searching for something to make ahead for the week (something I do to save time—I will cook a large batch of food on one day of the week, thus sparing myself from having to cook everyday) I sat back and thought hard about what it was that I didn’t like about stuffed peppers. It wasn’t the peppers, and it wasn’t so much the concept of “rice+meat+sauce”, it was just those original ingredients did nothing for me. So, I swapped them out, for something a bit more palette pleasing, and well, “gourmet”, if you like. In lieu of ground beef, I now use a lovely seasoned pork sausage. For traditional white rice, I use long-grain wild rice, jazzed up with chopped baby portabella mushrooms sauteed with some shallots, and in place of plain ol’ tomato sauce, I use either alfredo, or a parma-rosa, which is a combination of marinara, cream and parmesan cheese. For a really pretty plate presentation, just spoon some of the sauce onto the plate first (as opposed to topping your pepper with it, as it’s not necessary for the baking) and then place your pepper cup directly on top. Sprinkle with shredded parmesan cheese, and dig in. See? You can teach an old dog a new trick. : )

Project12 is my 12week challenge to lose weightin time for Christmas 2011.

So 1 week down and it has been a struggle. I think I went to hard at the start of the week, as I hurt across my chest & arms for 2 days straight. Playing with my 3yo even hurt, but pulled though it and toned down my training.

At the moment am spending my time doing cardio and spending most of my time on the treadmill running out 5-6kms. Next week I am going to stretch that out to 10kms as I am running faster & not tiring out as quick, so time to step it up a little bit.

I have my session booked with a personal trainer next week, and going to get them to help me step out a training program.

Diet has not changed that much, as we already eat lots of vegies, but have not had any fast food

Starting weight is 89.1kg (196.43lbs)
Goal weight is 78kg
